hi,i think that nic bonding is better to have on physical nic on host rather that in every vm.right?in vm we have an vmnic.right?

yes, use multiple physical NICs as uplinks for your vswitches. Your VM only needs a single vmnic unless you have an application that requires otherwise

I'd leave the vSAN traffic alone, nothing else. Create a dvSwitch only for vSAN traffic and you can create another one for Management where you can have the vMotion traffic also.
